Purificação, responsible for Quinta da Aveleda's canteen, feeds all who work here always with great care and dedication. After a christmas holiday season, she wanted to surprise the Aveleda workers with a dish that would help them recover from the excesses of previous days. In collaboration with Clavel's Kitchen came this delicious Green Rocket Soup, perfect to pair with a small glass of Quinta da Aveleda. INGREDIENTS
- 1 tablespoon of coconut oil
- 1 small onion
- 2 garlic cloves
- 12 fresh asparagus
- ½ fennel bulb
- 2 celery stalks
- 350ml of vegetable broth or boiling water
- 50g of rocket
- 50g of spinach
- Juice and zest of 1 lime
- Seeds to sprinkle
PREPARATION
Put the coconut oil on a pot, add the onion, the garlic, the asparagus, the fennel and the celery, all cut in small pieces and let them stir-fry for 5 minutes. Add the broth and let it cook for 10 minutes in medium-low heat. Add the rocket and the spinach and remove the pot from the heat. Add the juice and lime zest and blend everything with a hand blender until you get a creamy texture. If necessary, add more broth. Serve very hot with sprinkled seeds.
