Aveleda Alvarinho and cauliflower with cheese sauce

Ingredients:
1 cauliflower
70 ml olive oil
20 ml soy sauce
Juice of 1/2 lemon
1 tbsp smoked paprika
1/2 tbsp garlic powder
Salt and black pepper to taste
For the cheese sauce:
100g cashews
150g natural tofu
200 ml vegetable drink
2 tsp nutmeg
1 tbsp garlic powder
Salt and black pepper to taste
Base: canonigos
Toppings to taste: lemon zest, sesame seeds, black pepper, red onion and Peanuts
Preparation
Soak the cashews in hot water. Set aside.
Mix the olive oil with the soy sauce, lemon juice and spices in a bowl.
Place the cauliflower on a tray and season with the previous mixture. Incorporate the spices into the cauliflower and bake in a preheated oven at 180ºC for about 25 minutes (or until golden brown).
Place the cashews (remove the water beforehand), tofu, vegetable drink and spices in a food processor. Blend until smooth.
Transfer the mixture to a saucepan and cook for about 3 minutes over a medium heat.
To serve: place the canonigos on the base of a plate and add the roasted cauliflower. Pour the "cheese" sauce over the cauliflower and finish with toppings to taste: lemon zest, sesame seeds, black pepper, red onion and peanuts.
