Cheese Lovers Day - 3 Delicious Cheese Recipes with Quinta da Aveleda's Cheese

In addition to his great passion for Aveleda wines, Pedro Barbosa, Aveleda's viticulture director, is a great cheese connoisseur. On one occasion, he wanted to surprise the rest of the viticulture team with a pairing that revealed all the charms of these two wonders. Thus, he had the collaboration of Clavel's Kitchen that created these 3 recipes with Quinta da Aveleda Cheeses perfect to pair with Aveleda Alvarinho. Today, on Cheese Lovers Day, involve the senses in one of the most perfect pairings with our wines! Discover the recipes.


1. DICED SEASONED CHEESE

INGREDIENTS
  • 1 Cheese (Cheddar, Gouda, Edam, Gruyère) 
  • Pepper 
  • Fresh oregano 
  • 1 tablespoon of olive oil 
  • Fleur de Sel 
 
PREPARATION
Remove/cut the rind (wax, cloth, hard skin), dice the cheese and put it in a bowl. Add the pepper, the fresh oregano and season with olive oil. Sprinkle Fleur de Sel and serve. 

 
2. HERB & CHEESE PÂTÉ

INGREDIENTS
  • 1 Cheese (Cheddar, Gouda, Edam, Gruyère) 
  • ½ teaspoon of powdered garlic 
  • 50g of mayonnaise  
  • 15g of pine nuts 
  • Fleur de Sel 
  • 2 tablespoons of olive oil 
  • Dried oregano 
 
PREPARATION
Remove/cut the rind (wax, cloth, hard skin), fine dice the cheese and place it in a blender. Add the rest of the ingredients to the blender until it forms a thick paste. Place it in a bowl and sprinkle with more oregano. 
 

3. ROASTED CHEESE WITH HONEY, NUTS AND CRANBERRIES

INGREDIENTS
  • 1 Cheese (Brie, Camembert, St. Andre cheese) 
  • 1 pack of fresh cranberries 
  • 1 pack of fresh raspberries 
  • 1 tablespoon of honey 
  • 20g of walnuts 
  • 20g of hazelnuts 
  • 3 leaves of fresh basil 
 
PREPARATION
Pre-heat the oven to 180 ºC. Remove the upper rind of the cheese and place it in an oven plate. Make cuts inside the cheese and add the nuts and the cranberries and pour the honey. Put it in the oven for 15 to 20 minutes (or until the cheese melts). Remove from the oven and decorate with the raspberries and basil leaves.
