Aveleda Loureiro & Alvarinho and linguine with pesto sauce

Ingredients:
500g linguine
1/2 avocado
2 handfuls of fresh coriander
1 handful of fresh spinach
60g parmesan cheese
1 clove of garlic
80 ml olive oil
Juice of 1/2 lemon
Seasoning to taste: salt and black pepper
To finish: cherry tomatoes, burrata, dried fruit
Preparation:
Place the avocado, spinach, coriander, garlic, Parmesan, olive oil, lemon juice and seasoning to taste in a food processor. Blend until smooth.
Cook the linguine until al dente (check the cooking time on the package).
Pour the coriander pesto over the cooked pasta and mix everything together.
Finish to taste (suggestion: cherry tomatoes, burrata and dried fruit).
