Aveleda Loureiro & Alvarinho and linguine with pesto sauce

Ingredients:
  • 500g linguine
  • 1/2 avocado
  • 2 handfuls of fresh coriander
  • 1 handful of fresh spinach
  • 60g parmesan cheese
  • 1 clove of garlic
  • 80 ml olive oil
  • Juice of 1/2 lemon
  • Seasoning to taste: salt and black pepper
  • To finish: cherry tomatoes, burrata, dried fruit
 
Preparation:
  1. Place the avocado, spinach, coriander, garlic, Parmesan, olive oil, lemon juice and seasoning to taste in a food processor. Blend until smooth.
  2. Cook the linguine until al dente (check the cooking time on the package). 
  3. Pour the coriander pesto over the cooked pasta and mix everything together. 
  4. Finish to taste (suggestion: cherry tomatoes, burrata and dried fruit).
  5. Enjoy with Aveleda Loureiro & Alvarinho!
