Fish Bowl with Quinoa Recipe

Ingredients


For the Quinoa
Olive Oil
1 garlic clove
200g of quinoa
Water
Salt

For the Fish Bowl

3 tablespoons of sesame seeds
250g of sea bass fillets
40g fresh minced ginger
1 minced seedless red pepper
½ minced red chili pepper
10g minced coriander 
Salt
4 tablespoons of soy sauce
2 tablespoons of olive oil
1 avocado
Juice of 1 lime

Preparation


For the quinoa, in a small pot, sauté the garlic in the olive oil. Add the quinoa and let it sear lightly, without burning. Add double parts of water, season with salt and let it cook at a medium heat for 15 minutes. Remove the pot and let it cool down. For the fish, place the sesame seeds on a frying pan and toast them lightly. Set aside.
Dice the sea bass fillets Place them in a bowl and add the ginger, the chili pepper, the onion, the coriander and the toasted sesame seeds. Season with salt, soy sauce and olive oil to taste. Mix very well and let it cool in the fridge for 1 hour. On a small bowl, place the quinoa and add the fish mix on top. Add the avocado slices and sprinkle with lime juice.
